Before you doubt the ability of cauliflower to taste amazing as pizza crust, give this recipe a try. Serving Size: 2 small pizzas
Prep time: 30 minutes
Ingredients- 2 small to medium heads of Cauliflower
- 2 Eggs (1 whole, 1 egg white only)
- 1/2 cup of Parmesan
- Pepper
- Salt
- Allspice (optional)
- Basil leaves (optional)
- Olive oil or butter
- Food processor or blender
- Kitchen cloth
- Parchment paper
- Cookie sheet/Baking pan
- Rolling pin or bowl
- Preheat your oven to 200C.
- Pulse the cauliflower in a food processor or blender until it has a fine or grainy consistency.
- Mix the cauliflower with the eggs, parmesan, pepper, salt, allspice and basil leaves in a bowl.
- Once it is thoroughly mixed, put the mixture on a kitchen cloth and squeeze the moisture out.
- On a sheet of parchment, brush olive oil or butter to mimic the shape of your pizza.
- Place your dough on the sheet and use the rolling pin or bowl to flatten the crust out to create an even base.
- Put the parchment paper on the cookie sheet.
- Lightly brush the crust with some more oil.
- Put the cookie sheet into the oven and wait until the crust is golden brown before removing it. (Around 10-15 minutes)
- Once your crust is ready, add whatever toppings, such as marinara sauce, cheese and pepperoni, onto your pizza then pop it back in the oven for around 3-5 minutes.
- Let the pizza cool for at least 3 minutes before removing it from the parchment paper.
