Chicken Kofta Balls

Prep Time: 30-45 minutes
Ingredients

  1. 300g Ground chicken breast
  2. Salt
  3. Pepper
  4. 25g Light cream cheese spread - I use Philadelphia Cheese
  5. 200g Tomato sauce - I use Del Monte Original Sauce 
  6. 100g Diced tomato, seeds removed
  7. Basil Leaves Herb - I use McCORMICK
  8. Garlic Powder - I use McCORMICK
  9. Hot sauce (Optional) 
Procedure
  1. Season your ground chicken breast with salt and pepper. 
  2. Make sure your hands are wet when rolling the defrosted chicken breast so that it will not stick to your palms while you roll them. Tip: Have a bowl of water beside you in case your hands start to become sticky.
  3. Grab a small portion of ground chicken breast with one hand and flatten it across your palm.
  4. Grab a small ball of cream cheese and put it in the center of the ground chicken breast.
  5. Grab another small portion of ground chicken breast and put it over the cream cheese. Make sure each side of the chicken breast is thick enough to hold the cream cheese together but thin enough that it will not be hard to cook all the way through. 
  6. At this point, your palm should be holding what looks like a chicken breast-cheese-chicken breast sandwich.
  7. Begin rolling the ground chicken breast into a ball. Make sure the edges of the chicken cover the small ball of cream cheese in the middle. Repeat steps 3-7.
  8. Heat a non-stick frying pan over medium heat. (If you do not have a non-stick pan, you can use olive oil which will give more flavour to your sauce!)
  9. Place all kofta balls on the pan. Move the kofta balls around to make sure all sides are being cooked. Do this until the kofta balls are white and light brown all over. (10 minutes)
  10. Add in the tomato sauce and diced tomato. Season the sauce with salt and pepper. Allow the sauce to simmer. Put a cover over your pan to help the balls cook evenly. 
  11. Add in the basil leaves herb, garlic powder, hot sauce and any left over cream cheese. Stir the mixture around from time to time. (15-20 minutes)  
  12. To make sure the kofta balls are ready, pick one out of the batch and cut it in half. The ball should be cooked all the way through and the cheese should be melted.
  13. Remove from pan and into a bowl. Eat it while it's hot!
